I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Makes about five 8-Ounce jars

 

INGREDIENTS

  • 2 cups peeled, seeded, and chopped Roma or other plum-type tomatoes (8 to 10 medium tomatoes)
  • 2⁄3 cup chopped red onions
  • 2⁄3 cup canned tomato sauce
  • 3 tablespoons seeded and finely chopped jalapeño peppers
  • 3 tablespoons freshly squeezed lime juice
  • 11⁄2 teaspoons finely grated lime zest
  • 1⁄4 teaspoon Tabasco® or other hot pepper sauce
  • 5 cups granulated sugar
  • 1 pouch (3 ounces) liquid pectin

 

INSTRUCTIONS

  1. In an 8-quart stainless steel stockpot, combine the tomatoes, onions, tomato sauce, and jalapeños. Bring to a boil over medium heat, stirring constantly. Reduce the heat and simmer gently for 5 minutes, stirring frequently to prevent sticking. Add the lime juice, lime zest, and Tabasco, then gradually stir in the sugar.
  2. Heat the mixture over medium-low heat, stirring constantly, until the sugar is completely dissolved. Increase the heat to medium high and bring to a full rolling boil, stirring constantly. Stir in the pectin. Return the mixture to a full rolling boil, stirring constantly. Boil for 1 minute, stirring constantly.
  3. Remove the pot from heat and skim off any foam. Let the jam cool in the pot for 5 minutes, stirring occasionally.
  4. Ladle the jam into hot jars, leaving ¼-inch headspace. Remove any air bubbles. Wipe the jar rims and threads with a clean, damp paper towel. Apply hot lids and screw bands.
  5. Process 4-ounce, 8-ounce, and pint jars in a water bath canner for 10 minutes. Remove from the water bath canner and let cool for 12 to 24 hours. Check the seals and remove the screw bands. Store jars in a cool, dry, dark place for up to 1 year.

 

SERVING SUGGESTION:

  • To create special appetizers for your next party, spread softened goat cheese or cream cheese on crackers or crostini and top with a small spoonful of this zesty jam.
