TRIPLE APPLE OATMEAL WITH MAPLE SYRUP

SERVES 4

 

INGREDIENTS

  • 2 cups apple cider
  • 2 cups plain unsweetened oat milk
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon plus 1/8 teaspoon ground cinnamon, divided
  • 2 cups rolled oats
  • 1 cup shredded peeled apple, such as Fuji (about 2 apples)
  • 1/4 cup pure maple syrup
  • 1 cup small dice unpeeled apple, such as Fuji

 

INSTRUCTIONS

  1. Add the cider, oat milk, salt, and 1/2 teaspoon of the cinnamon to a medium saucepan.
  2. Stir the ingredients and bring to a boil over medium-high heat.
  3. Stir in the oats and shredded apple, and cook uncovered over medium heat until thickened, about 2 minutes, stirring frequently.
  4. Stir in the maple syrup.
  5. Cover the pan and let sit off of the heat until thickened and the oats and apple are cooked through, about 5 minutes.
  6. Stir again.
  7. Ladle the oatmeal into 4 small bowls.
  8. Sprinkle the diced apple and remaining 1/8 teaspoon cinnamon over the top.
  9. Serve and enjoy!
