GUINNESS CHOCOLATE SAUCE

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

This unusual version of chocolate sauce uses Guinness stout with its caramel and honey notes and underlying toastiness. This sauce is as delicious mixed with milk for chocolate milk as it is over ice cream.

1 cup (240 ml)

PREP TIME: 5 minutes          COOK TIME: 10 minutes

INGREDIENTS

  • ¾ cup (150 g) granulated sugar
  • Pinch of salt
  • ½ cup (43 g) unsweetened cocoa powder
  • 1 cup (240 ml) Guinness stout
  • 1½ cups (270 g) semisweet chocolate chips
  • 2 tsp (10 ml) vanilla

PREPARATION

  1. In a small saucepan, whisk together the sugar, salt, cocoa powder and Guinness.
  2. Bring to a boil and turn down and allow to simmer for about 5 minutes.
  3. Remove the pot from the heat and whisk in the chocolate chips and the vanilla.
  4. Cool completely and serve over vanilla ice cream or a brownie sundae.
  5. Store unused sauce in an airtight container in the refrigerator.
