Vegan Blueberry Lavender Ice Cream

Blueberries and lavender complement each other beautifully and would make
a great addition to afternoon tea.

Blueberry Road
Though New Jersey claims the blueberry as its state fruit, Maine is
the blueberry production capital of North America and produces
almost 100 percent of all berries harvested in the United States. The
annual harvest of North American blueberries would cover a four lane highway from Chicago to New York if spread out in a single layer.

 YIELD: 1 QUART

INGREDIENTS 

  • 1 cup cashews
  • 1 cup water
  • ½ cup extra-virgin coconut oil
  • 1½ cups blueberry purée
  • ½ cup agave nectar
  • 2 teaspoons dried lavender flowers
  • Pinch salt
  • 1 cup vanilla-flavored coconut milk creamer
  • 1 tablespoon vanilla extract

PREPARATION

  • Soak the cashews in water overnight. Drain.
  • Blend everything together in a blender or food processor until completely liquefied.
  • Refrigerate for 4 hours to overnight.
  • Add to ice cream maker and follow manufacturer’s instructions for freezing.
