INGREDIENTS

  • 2 tablespoonfuls melted Crisco (shortening)
  • 2 cauliflowers
  • 4 poached eggs
  • Salt and paprika to taste
  • Toasted bread

 

INSTRUCTIONS

  1. Boil the cauliflowers in salted water until they become tender.
  2. Drain the boiled cauliflowers and set them near the fire to allow any excess moisture to evaporate, ensuring they become quite dry.
  3. Remove all green parts from the cauliflowers.
  4. Press the cauliflower flowerets through a potato ricer onto a hot serving dish. This should create a delicate “snow-like” texture.
  5. As you press the cauliflower through the ricer, take care not to crush the mass, allowing it to retain its fluffy nature.
  6. Sprinkle the melted Crisco over the cauliflower snow to add richness and flavor.
  7. Surround the serving dish with poached eggs, each placed on a square of toasted and buttered bread.
  8. Dust each poached egg with salt and a sprinkle of paprika to enhance flavor and appearance.
  9. Serve the Cauliflower Snow dish while it’s very hot to maintain its visual appeal and taste.
