  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste

 

FOR THE PORK CHOPS:

  • 4 pork chops
  • Cajun seasoning (from above)
  • 2 tablespoons olive oil

 

FOR THE SMOTHERING MIXTURE:

  • 1 onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup chicken or vegetable broth
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste

 

INSTRUCTIONS 

  1. In a bowl, combine the ingredients for the Cajun seasoning: paprika, garlic powder, onion powder, dried thyme, dried oregano, cayenne pepper, salt, and pepper. Mix well to create the seasoning blend.
  2. Season the pork chops generously on both sides with the Cajun seasoning blend. Allow the chops to sit at room temperature for about 15-20 minutes to absorb the flavors.
  3. In a large skillet, heat the olive oil over medium-high heat. Add the pork chops and sear them for about 3-4 minutes on each side, until they are nicely browned. Remove the pork chops from the skillet and set them aside.
  4. In the same skillet, add the sliced onions and bell peppers. Sauté them for a few minutes until they begin to soften and caramelize.
  5. Add the minced garlic to the skillet and sauté for another minute until fragrant.
  6. Pour in the diced tomatoes (with their juices), chicken or vegetable broth, and Worcestershire sauce. Stir to combine the ingredients and bring the mixture to a gentle simmer.
  7. Return the seared pork chops to the skillet, nestling them into the smothering mixture. Cover the skillet and let the chops simmer in the sauce for about 15-20 minutes, or until the pork chops are cooked through and tender.
