  • 2 cups cooked chicken breast, shredded or diced
  • 1/2 cup mayonnaise

  • 1 stalk celery, finely diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup dried cranberries or grapes, halved
  • 1/4 cup chopped pecans or almonds (optional)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh lemon juice
  • Salt and black pepper to taste
  • Slices of your favorite bread
  • Lettuce leaves, tomato slices, or other sandwich toppings

 

INSTRUCTIONS

  1. Start by cooking the chicken if not already cooked. You can use roasted, grilled, or poached chicken breasts. Shred or dice the chicken into small pieces.
  2. In a mixing bowl, combine the mayonnaise, Greek yogurt, Dijon mustard, fresh lemon juice, salt, and black pepper. Whisk until the dressing is smooth and well incorporated.
  3. Add the diced celery, finely chopped red onion, dried cranberries or halved grapes, and chopped pecans or almonds (if using) to the dressing. Stir to coat the ingredients.
  4. Incorporate the shredded or diced chicken into the dressing mixture. Gently fold the chicken into the dressing to ensure it’s evenly coated.
  5. Taste the chicken salad and adjust the seasoning by adding more salt, black pepper, or lemon juice as desired.
  6. Cover the bowl and refrigerate the chicken salad for at least 30 minutes. Chilling allows the flavors to meld and develop.
  7. When ready to serve, lay out slices of your favorite bread. Place lettuce leaves on one side of the bread slices. You can also add tomato slices or other preferred toppings.
  8. Spoon a generous amount of the chilled chicken salad onto the bread slices with the lettuce and toppings.
  9. Place another slice of bread on top of the chicken salad to create a sandwich. Press down gently to secure the layers.
  10. If desired, you can cut the sandwich in halves or quarters for easier handling. Serve the Chicken Salad Sandwiches immediately or wrap them for picnics or on-the-go meals.
