INGREDIENTS:

  • 150g Devondale Unsalted Butter – roughly chopped
  • 1 egg – lightly beaten
  • 1 ¼ cups plain flour
  • ⅓ cup brown sugar
  • ⅛ tsp baking powder
  • ¾ cup dark choc chips

 

INSTRUCTIONS:

  1. PREHEAT OVEN: Preheat a metal tray with a baking sheet in the oven for 10 minutes at 190ºC.
  2. PREPARE BUTTER MIXTURE: Melt the butter and allow it to cool. Add the lightly beaten egg and give it a gentle whisk.
  3. COMBINE DRY INGREDIENTS: In a large bowl, combine the plain flour, brown sugar, baking powder, and dark choc chips. Mix the dry ingredients well.
  4. ADD BUTTER MIXTURE: Stir in the butter and egg mixture into the dry ingredients. Mix until a dough is formed.
  5. SHAPE AND BAKE: Remove the preheated oven tray and work quickly. Place tablespoon-sized portions of the dough on the tray and press them slightly to flatten, leaving some room for slight spreading.
  6. BAKE: Bake the cookies in the preheated oven for 12-15 minutes or until they are golden brown.
  7. COOL: Once baked, remove the cookies from the oven and place them on a cooling rack.

 

TIP: The cookies are ready when they have a golden brown color, indicating they’re nicely baked and ready to be enjoyed.

 

Here are some variations you can try for this cookie recipe:

  1. Chocolate Peanut Butter Cookies: Add 1/2 cup of peanut butter to the dough. You can also mix in some chopped peanuts for extra texture.
  2. White Chocolate Cranberry Cookies: Replace the dark choc chips with white chocolate chips and add 1/2 cup of dried cranberries to the dough.
  3. Oatmeal Raisin Cookies: Add 1/2 cup of rolled oats and 1/2 cup of raisins to the dough. The oats will give the cookies a nice chewy texture.
  4. Double Chocolate Cookies: Increase the amount of choc chips to 1 cup and use a combination of dark and milk chocolate chips for an extra chocolatey flavor.
  5. Mint Chocolate Chip Cookies: Add 1/2 teaspoon of mint extract to the butter mixture and use dark choc chips with mint flavor.
  6. Nutty Chocolate Cookies: Add 1/2 cup of your favorite chopped nuts, such as walnuts, almonds, or pecans, to the dough.
  7. Spiced Chocolate Cookies: Add 1 teaspoon of ground cinnamon and 1/4 teaspoon of ground nutmeg to the dry ingredients for a warm and spiced flavor.
  8. Coconut Chocolate Cookies: Add 1/2 cup of shredded coconut to the dough along with the choc chips for a tropical twist.
  9. Salted Caramel Chocolate Cookies: Drizzle a bit of caramel sauce on top of each cookie before baking and sprinkle a touch of sea salt over the caramel.
  10. Fruit and Nut Cookies: Add a mix of dried fruits like chopped dried apricots, dates, and cranberries, along with chopped nuts, to create a delightful fruit and nut cookie.
  11. Chocolate Espresso Cookies: Add 2 tablespoons of instant espresso powder to the dry ingredients for a rich coffee flavor that pairs beautifully with chocolate.
