INGREDIENTS

  • 1 pint noodles
  • 3/4 cupful sugar
  • 4 eggs
  • 1/4 cupful melted Crisco (shortening)
  • Zest of 1 lemon (grated lemon peel)
  • 1/4 cupful blanched and chopped almonds
  • 2 cupfuls milk
  • 1/4 teaspoonful salt

 

INSTRUCTIONS

  1. Cook the noodles: Boil the noodles in salted water for about five minutes. Drain them in a colander.
  2. Prepare the egg mixture: Beat the eggs until light and stir in the cooked noodles.
  3. Grease the pudding dish: Use Crisco to grease a pudding dish, ensuring it is well-coated.
  4. Layer the noodles: Create layers of noodles in the pudding dish, sprinkling each layer with sugar, chopped almonds, grated lemon peel, and melted Crisco.
  5. Repeat layering: Continue layering noodles and the mentioned ingredients until all are used up.
  6. Add milk and salt: Pour the milk over the layered noodles, ensuring that the mixture is evenly distributed. Sprinkle a pinch of salt.
  7. Bake: Preheat the oven to a moderate temperature. Bake the noodle pudding in the oven for approximately one hour, or until the top is golden and the pudding is set.
  8. Serve: Once baked, remove the noodle pudding from the oven. Serve it hot, either on its own, with milk, or with cream. It can also be enjoyed with stewed fruits for an extra burst of flavor.
