INGREDIENTS

For Pudding:

  • 1/2 cupful molasses
  • 1 egg
  • 1 tablespoonful breadcrumbs
  • 3/4 cupful milk
  • 1/2 teaspoonful salt

 

For Sauce:

  • 1 teaspoonful Crisco (shortening)
  • 1 teaspoonful cornstarch
  • 2 tablespoonfuls lemon juice
  • 3 tablespoonfuls molasses
  • 1 cupful hot water

 

INSTRUCTIONS

For Pudding:

  1. In a mixing bowl, combine the flour, powdered ginger, baking soda, and breadcrumbs.
  2. Rub in the Crisco using your fingertips until the mixture resembles coarse crumbs.
  3. In a separate bowl, beat the egg and then add the milk, molasses, and salt. Mix well.
  4. Gradually stir the wet ingredients into the dry mixture until a smooth batter forms.
  5. Grease a pudding mold with Crisco.
  6. Pour the batter into the prepared mold.
  7. Cover the mold with greased paper.
  8. Place the mold in a steamer and steam steadily for two hours.
  9. Once cooked, carefully turn out the pudding onto a serving dish.

 

For Sauce:

  1. In a saucepan, blend the Crisco and cornstarch together.
  2. Add the molasses, lemon juice, and hot water to the saucepan.
  3. Bring the mixture to a boil and cook for a few minutes until the sauce thickens.

 

Serving:

  1. To serve, slice the molasses sponge pudding and drizzle the warm sauce over each portion.
