Raw Vegan Reese’s Cups

INGREDIENTS:

“PEANUT” BUTTER FILLING:

  • 1/2 cup sunflower seed butter
  • 1/2 cup almond butter
  • 1 tbsp. raw honey
  • 2 tbsp. melted coconut oil

SUPERFOODS CHOCOLATE PART:

  • 1/2 cup cacao powder
  • 2 tbsp. raw honey
  • 1/3 cup melted coconut oil

 

INSTRUCTIONS:

  1. Prepare the Filling:
    • In a bowl, combine the sunflower seed butter, almond butter, raw honey, and melted coconut oil.
    • Mix the ingredients well until smooth and thoroughly combined.
  2. Assemble the Cups:
    • Line a muffin tin with paper or silicone muffin cups.
    • Place a spoonful of the “Peanut” butter filling mixture into each muffin cup, spreading it out to form the bottom layer.
    • Refrigerate the muffin tin to set the bottom layer.
  3. Prepare the Superfoods Chocolate:
    • In a separate bowl, whisk together the cacao powder, raw honey, and melted coconut oil.
    • Mix until you have a smooth and glossy chocolate mixture.
  4. Add the Chocolate Layer:
    • Remove the muffin tin from the refrigerator.
    • Spoon a layer of the Superfoods chocolate mixture over the “peanut” butter filling in each muffin cup. Spread it evenly to cover the filling.
  5. Freeze and Enjoy:
    • Place the muffin tin in the freezer to allow the chocolate layer to set. This will take about 30 minutes to an hour.
    • Once the chocolate is firm, remove the cups from the muffin tin.
    • Enjoy your homemade Superfoods Peanut Butter Cups straight from the freezer.

 

VARIATIONS:

  1. Nutty Crunch: Add a tablespoon of chopped nuts (such as almonds, walnuts, or peanuts) to the “peanut” butter filling for an extra crunch and nutty flavor.
  2. Berry Burst: Before adding the chocolate layer, place a small amount of fresh berries (such as raspberries, blueberries, or strawberries) on top of the “peanut” butter filling.
  3. Coconut Bliss: Mix shredded coconut into the “peanut” butter filling for a delightful coconut texture. You can also sprinkle shredded coconut on top of the chocolate layer.
  4. Salted Caramel Twist: Incorporate a pinch of sea salt into the “peanut” butter filling to create a sweet and salty contrast. You can also drizzle a bit of caramel sauce over the chocolate layer before freezing.
  5. Chocolate Swirl: Swirl some of the Superfoods chocolate mixture into the “peanut” butter filling to create a marbled effect. This adds visual interest and additional chocolatey goodness.
  6. Nutty Delight:
    • Add a layer of crushed nuts (such as almonds, walnuts, or pecans) between the “Peanut” butter filling and the Superfoods chocolate layer for an extra nutty crunch.
  7. Berry Bliss:
    • Mix some freeze-dried berries (such as strawberries, raspberries, or blueberries) into the “Peanut” butter filling for a burst of fruity flavor and color.
  8. Minty Fresh:
    • Add a few drops of peppermint extract to the Superfoods chocolate mixture for a refreshing mint flavor. You can also sprinkle crushed peppermint candies on top.
  9. Chia Seed Crunch:
    • Mix chia seeds into the “Peanut” butter filling to add a healthy dose of omega-3 fatty acids and a delightful crunch.
  10. Coconut Almond Joy:
    • Add shredded coconut to the “Peanut” butter filling and top with whole or chopped almonds before adding the Superfoods chocolate layer for a taste reminiscent of Almond Joy candies.
  11. Fruity Medley:
    • Dice a variety of dried fruits (such as apricots, raisins, and figs) and mix them into the “Peanut” butter filling for a chewy and fruity surprise.
