Blueberry Cream Pie

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

 

INGREDIENTS:

  • Sweet Superfoods pie crust
  • Filling:
    • 2 Teaspoons plant-based gelatin, dissolved in 2 Tbsp. hot water
    • 1/3 cup lemon juice
    • 1/3 cup raw honey
    • 1 can coconut milk, chilled
    • 4 cups blueberries for serving

 

INSTRUCTIONS:

  1. Mix the plant-based gelatin and hot water in a small bowl. Stir well to dissolve the gelatin.
  2. Add the lemon juice to the dissolved gelatin mixture. Mix thoroughly and set aside.
  3. Using an electric mixer, whip the chilled coconut milk and raw honey together for about 15 minutes. The mixture should become creamy and slightly thick.
  4. Gently fold the gelatin-lemon mixture into the whipped coconut cream. Ensure the mixture is well combined.
  5. Take the Sweet Superfoods pie crust and pour the prepared filling into it. Spread the filling evenly.
  6. Place the pie in the refrigerator to allow the filling to set. Chill for at least 4 hours or until the filling is firm.
  7. Once the pie is set, remove it from the refrigerator.
  8. Before serving, generously top the pie with fresh blueberries.
  9. Slice and serve the Sweet Superfoods Blueberry Pie, enjoying the creamy coconut and tangy blueberry flavors.

    • Swap blueberries for sliced fresh peaches or nectarines.
    • Add a touch of ground cinnamon or nutmeg to enhance the peach flavor.
