- 2 Cups Raw Sunflower Seeds
- 1 Cup Sesame Seeds or Chia Seeds

- 1-1/2 Cups Water
- 1-1/2 Cups Coconut Oil
- 1 Cup Raw Honey
- 1-1/2 Teaspoons Salt
- 2 Teaspoons Cinnamon
- 1 Tablespoon Ground Vanilla Bean
- Dried Cranberries
INSTRUCTIONS:
- Preheat the oven: Turn the oven on and heat it to 300°F (150°C).
- Prepare Dry Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, raw sunflower seeds, sesame seeds or chia seeds, chopped nuts (almonds, pecans, walnuts), and dried cranberries. Mix the dry ingredients well to distribute them evenly.
- Prepare Wet Mixture: In a large pan, combine the water, coconut oil, raw honey, salt, cinnamon, and ground vanilla bean. Heat the mixture over low heat, stirring, until the raw honey is fully dissolved. Be careful not to bring it to a boil.
- Combine Wet and Dry: Pour the honey mixture over the dry ingredients in the mixing bowl. Stir thoroughly to ensure all the dry ingredients are coated with the wet mixture.
- Spread and Bake: Spread the mixture onto cookie sheets in an even layer. You might need to use multiple cookie sheets or bake in batches, depending on the size of your sheets.
- Bake and Stir: Place the cookie sheets in the preheated oven. Bake for about 25 to 30 minutes, stirring occasionally to ensure even baking. The granola should turn golden brown and crisp.
- Cool and Store: Once the granola is baked to your desired level of crispness, remove the cookie sheets from the oven and let the granola cool completely. As it cools, it will become even crunchier. Store the cooled granola in a cool, dry place in an airtight container.
