Whipped Coconut cream

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

 

INGREDIENTS:

  • 4 cups of any fresh berries
  • 2 lemons
  • 1 can full fat coconut milk (14 oz.), refrigerated overnight
  • 1 tsp of ground vanilla bean
  • 2 Tbsp. raw honey
  • Dash of cardamom, nutmeg, and clove (optional)

 

INSTRUCTIONS:

  1. Prepare Coconut Cream:
    • Refrigerate the can of coconut milk overnight without shaking it.
  2. Whip Coconut Cream:
    • Open the can of coconut milk and carefully scoop out the separated coconut cream into a bowl. Reserve the milk for other recipes.
    • Add cardamom, raw honey, and ground vanilla bean to the coconut cream.
    • Use a hand mixer to whip the cream until it becomes fluffy. Place the bowl of whipped cream in the fridge.
  3. Prepare Berries:
    • Wash the fresh berries thoroughly.
  4. Add Lemon Juice:
    • Squeeze the juice of the lemons over the berries to add a tangy flavor.
  5. Assemble and Serve:
    • Divide the prepared berries among serving bowls or glasses.
    • Place a generous scoop of the whipped coconut cream on top of the berries.
    • Optionally, sprinkle a dash of nutmeg and clove for additional flavor.
    • Serve immediately and enjoy the refreshing and creamy berry parfait!

This delightful dessert combines the natural sweetness of fresh berries with the richness of whipped coconut cream, creating a flavorful and satisfying treat.
