  • 4 tablespoonfuls Crisco (shortening)
  • 1 cauliflower
  • 1 sliced onion
  • 1 dessertspoonful curry powder
  • 1 tablespoonful lemon juice
  • 1/4 teaspoonful salt
  • 1 cupful stock or water

 

INSTRUCTIONS

  1. Begin by boiling the cauliflower in salted water until it becomes tender. Once cooked, drain the cauliflower and divide it into small flowerets.

 

For Curry Base:

  1. Heat 4 tablespoonfuls of Crisco in a saucepan.
  2. Fry the sliced onion in the hot Crisco for a few minutes, allowing it to soften and develop flavor.
  3. Add the curry powder and lemon juice to the saucepan with the onions. Stir to combine, allowing the curry powder to bloom and release its aromatic compounds.
  4. Pour in the stock or water, and let the mixture simmer for about fifteen minutes. This allows the flavors to meld and intensify.
  5. Strain the curry mixture into a clean saucepan, discarding any solids. The strained liquid forms the flavorful base of your curry.

 

For Cooking the Cauliflower:

  1. Add the boiled and drained cauliflower flowerets to the strained curry base in the saucepan.
  2. Season the mixture with salt.
  3. Simmer the cauliflower in the curry base for an additional fifteen minutes, allowing the cauliflower to absorb the aromatic flavors of the curry.

 

To Serve:

  1. Once the cauliflower is tender and thoroughly infused with the curry flavors, transfer it to a serving dish.
  2. Serve the Curried Cauliflower hot, savoring the enticing blend of spices, the tenderness of the cauliflower, and the harmonious interplay of flavors.
