I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Serves: 4-6

 

INGREDIENTS:

  • 1-1/2 lb pork loin
  • 1 cup tomato sauce
  • 2 zucchinis, sliced
  • 1 head cauliflower, separated into medium florets
  • 1-2 Tbs dried basil
  • 1/4 tsp ground black pepper
  • 1/2 tsp sea salt (optional)

 

INSTRUCTIONS:

  1. Place the pork loin, sliced zucchinis, and cauliflower florets in the crockpot.
  2. Pour the tomato sauce over the ingredients in the crockpot.
  3. Sprinkle the dried basil, ground black pepper, and sea salt (if using) over the top.
  4. Cover the crockpot with a lid and cook on high for 3-4 hours or on low for 7-8 hours.
  5. Once the pork is tender and cooked through, remove it from the crockpot and slice it.
  6. Serve the sliced pork with the cooked zucchinis and cauliflower. You can also pour some of the tomato sauce from the crockpot over the top for added flavor.

VARIATIONS:

  6. Creamy Pork Stew: Stir in a dollop of cream cheese or coconut cream to the tomato sauce for a creamy and rich pork stew.
  7. Greek-Inspired Pork: Add some chopped Kalamata olives, cherry tomatoes, and crumbled feta cheese to the crockpot. Sprinkle with dried oregano and a drizzle of extra-virgin olive oil before serving. Serve with a side of Greek salad.
  8. Pork and Sweet Potato Stew: Replace the cauliflower with diced sweet potatoes. The sweetness of the sweet potatoes pairs well with the savory pork and tomato sauce. You can also add a touch of cinnamon for extra warmth and flavor.
  9. Pork and Root Vegetables: Use a mix of root vegetables like carrots, parsnips, and turnips instead of zucchinis and cauliflower. The hearty and earthy flavors of the root veggies complement the pork wonderfully.
