INGREDIENTS:
- 1 whole skinless chicken
- 1 dash Salt
- 1 dash Pepper
- 1 tsp. Oregano
- 2 cloves minced garlic
- 2 tbsp. coconut oil
- 1/4 cup Water
- 3 tbsp. Lemon juice
- Rosemary
INSTRUCTIONS:
- Wash the chicken thoroughly and pat it dry. Season the chicken with salt and pepper, both inside and out.
- Sprinkle half of the oregano and minced garlic inside the chicken cavity.
- In a frying pan, add coconut oil and heat it over medium-high heat. Brown the chicken on all sides until it develops a golden-brown color.
- Transfer the browned chicken to a crockpot.
- Sprinkle the remaining oregano and minced garlic over the chicken in the crockpot.
- Add water to the same frying pan used for browning the chicken. Stir to loosen any browned bits and pan drippings. Pour this liquid into the crockpot over the chicken.
- Cover the crockpot and cook the chicken on low heat for approximately 7 hours.
- When the cooking time is complete, add the lemon juice to the cooked chicken in the crockpot.
- Transfer the chicken to a cutting board and carve it into desired serving pieces.
- Skim off any excess fat from the liquid in the crockpot, then pour the juice into a sauce bowl.
- Serve the carved chicken with rosemary sprigs as garnish, and drizzle some of the reserved juice over the chicken.
