Pork Tenderloin with peppers and onions

Serves: 3-4

 

INGREDIENTS:

  • 1 tbsp. coconut oil
  • 1 pound pork loin
  • 1 tbsp. caraway seeds
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper
  • 1 red onion, thinly sliced
  • 2 red bell peppers, sliced
  • 4 cloves of garlic, minced
  • 1/4-1/3 cup chicken broth

 

INSTRUCTIONS:

  1. Wash and chop the red onion, red bell peppers, and garlic.
  2. Slice the pork loin into thin strips and season with ground black pepper, caraway seeds, and sea salt.
  3. Heat a pan over medium heat and add the coconut oil. Let it melt and coat the pan evenly.
  4. Add the seasoned pork loin to the pan and sauté until slightly browned on all sides.
  5. Add the thinly sliced red onions and continue sautéing until the onions become translucent.
  6. Stir in the red bell peppers and minced garlic. Cook until the vegetables start to soften.
  7. Pour in 1/4 to 1/3 cup of chicken broth, depending on your desired consistency of the dish.
  8. Simmer the mixture until the vegetables are tender, and the pork is fully cooked through.
  9. Taste and adjust seasoning if needed.
  10. Serve the delicious pork loin and vegetable stir-fry over steamed rice or noodles for a satisfying meal.
