INGREDIENTS

For the Potato Cases:

  • 2 lbs. cooked potatoes
  • 1 egg, well beaten
  • 2 tablespoonfuls melted Crisco (shortening)
  • Salt and pepper to taste
  • Fine breadcrumbs

 

For the Fish Mixture:

  • 1/2 lb. cold cooked fish or shrimps, flaked
  • 1/2 cupful milk
  • 4 tablespoonfuls Crisco (shortening)
  • 1/2 cupful water
  • 2 tablespoonfuls cream
  • 2 eggs
  • 4 tablespoonfuls flour
  • Salt, pepper, and red pepper to taste
  • 1 teaspoonful lemon juice
  • 1/2 teaspoonful anchovy extract (optional)

 

INSTRUCTIONS

  1. Prepare the Potato Cases:
    • Rub the cooked potatoes through a sieve to create a smooth texture.
    • Add a pinch of salt and pepper, 1 beaten egg, and 2 tablespoonfuls of melted Crisco to the potatoes. Mix well.
    • Roll out the potato mixture on a floured baking board to a thickness of 1-1/4 inches.
    • Cut the potato mixture into small rounds.
    • Brush the rounds with the remaining beaten egg.
    • Toss the rounds in fine breadcrumbs.
    • Using a smaller round cutter, mark the center of each round slightly.
    • Fry the potato rounds in hot Crisco until they achieve a golden color.
    • Carefully remove the bulk of potatoes from the inside of each round to create a hollow space for the filling.
  2. Prepare the Fish Mixture:
    • In a saucepan over medium heat, blend 2 tablespoonfuls of Crisco with flour to create a roux.
    • Gradually add the milk, water, and seasonings (salt, pepper, and red pepper). Cook for a few minutes until the mixture thickens.
    • Add the flaked fish or shrimps to the mixture, making it hot.
    • Stir in the cream and lemon juice. If desired, add anchovy extract for additional flavor.
  3. Assemble and Serve:
    • Fill each hollowed potato case with the prepared fish mixture.
    • Replace the lids of the potato cases.
    • Arrange the filled cassolettes on serving plates or a platter.
    • Serve the Cassolettes of Fish while they are still hot, showcasing the delightful blend of flavors and textures in this elegant dish.

 

NOTE: This recipe yields approximately ten cassolettes.
