Lentils have a storied history dating back thousands of years. INGREDIENTS

  • 1 cupful lentils
  • 2 cupfuls milk
  • 3 tablespoonfuls Crisco (shortening)
  • 3 pints stock or water
  • 1 onion
  • 1 carrot
  • 2 stalks celery
  • 1 tablespoonful flour
  • 1 bay leaf
  • Salt and pepper to taste
  • 1/4 cupful cream
  • Croutons

 

INSTRUCTIONS

  1. Begin by washing the lentils thoroughly and soaking them for twenty-four hours. After soaking, drain the lentils well.
  2. Cut the onion, carrot, and celery into small pieces. In a saucepan, melt Crisco over medium heat. Add the chopped vegetables, cover the saucepan, and gently cook the mixture for about fifteen minutes until the vegetables soften.
  3. Pour in the stock (or water) and add the bay leaf. Allow the soup to simmer for approximately 2 hours, allowing the flavors to meld.
  4. After simmering, pass the soup through a sieve to achieve a smooth consistency. Return the sieved soup to the pan.
  5. Add milk to the soup, creating a creamy and luscious texture. Season the soup with salt and pepper to taste.
  6. Moisten the flour with 1/2 cupful of milk or stock, creating a smooth paste. Add this paste to the soup, stirring continuously to prevent lumps. Simmer the soup for an additional five minutes, allowing it to thicken slightly.
  7. Adjust the seasoning as needed, ensuring the soup is perfectly balanced in flavor.
  8. Just before serving, incorporate the cream into the soup, adding a touch of richness and indulgence.
  9. To serve, ladle the Lentil Soup into bowls and garnish with croutons. Croutons, with their delightful crunch, provide a wonderful textural contrast to the creamy soup.
