Glazed Meatloaf

Serves :4

 

INGREDIENTS:

  • 1/2 cup tomato paste
  • 1/4 cup lemon juice, divided
  • 1 tsp. mustard powder
  • 2 pounds ground beef
  • 1 cup flax seeds meal
  • 1/4 cup chopped onion
  • 1 egg, beaten

 

INSTRUCTIONS:

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a small bowl, combine mustard powder, tomato paste, and 1 tablespoon of lemon juice. Mix well to create a tomato-mustard glaze.
  3. In a larger bowl, combine chopped onion, ground beef, flax seeds meal, beaten egg, and the remaining lemon juice. Add one-third of the tomato-mustard glaze from the smaller bowl. Mix all the ingredients thoroughly until well combined.
  4. Transfer the mixture into a loaf pan, shaping it into a loaf shape.
  5. Place the loaf pan in the preheated oven and bake at 350 degrees F for one hour or until the meatloaf is cooked through.
  6. Once the meatloaf is done baking, drain any excess fat if necessary.
  7. Coat the cooked meatloaf with the remaining tomato-mustard glaze and return it to the oven.
  8. Bake for an additional 10 minutes to let the glaze set and caramelize slightly.
  9. Remove the meatloaf from the oven and let it rest for a few minutes before slicing and serving.

Here are some variations of the meatloaf recipe:

1. Turkey and Quinoa Meatloaf:

  • Substitute ground turkey for the ground beef to create a leaner version of the meatloaf.
  • Replace the flax seeds meal with cooked quinoa for added texture and nutrition.
  • You can also add diced vegetables like carrots, bell peppers, or zucchini to boost the nutritional value.

2. BBQ Glazed Meatloaf:

  • Instead of the tomato-mustard glaze, use your favorite BBQ sauce as the glaze for the meatloaf.
  • You can also add some smoked paprika or liquid smoke to give it a smoky flavor.

3. Italian-Style Meatloaf:

  • Add Italian seasoning, garlic powder, and grated Parmesan cheese to the ground beef mixture.
  • Replace the tomato paste with marinara sauce and top the meatloaf with mozzarella cheese before baking.

4. Mushroom and Onion Meatloaf:

  • Sautee sliced mushrooms and onions until tender, then add them to the ground beef mixture.
  • Use a mushroom gravy as a glaze for the meatloaf.

5. Bacon-Wrapped Meatloaf:

  • Wrap the meatloaf with bacon slices before baking to add a smoky and savory flavor.

6. Mediterranean Meatloaf:

  • Add chopped sun-dried tomatoes, feta cheese, and olives to the ground beef mixture.
  • Top the meatloaf with a Mediterranean-inspired sauce made with olive oil, lemon juice, and herbs like oregano and parsley.

7. Asian-Inspired Meatloaf:

  • Add grated ginger, soy sauce, and sesame oil to the ground beef mixture for an Asian twist.
  • Serve the meatloaf with a sweet and tangy teriyaki glaze.

9. Mediterranean Stuffed Meatloaf:

  • Create a pocket in the center of the meatloaf and stuff it with a mixture of feta cheese, olives, and sun-dried tomatoes.
  • Seal the pocket and bake the meatloaf as usual.

10. Mexican Taco Meatloaf:

  • Add taco seasoning to the ground beef mixture and mix in diced bell peppers and corn.
