INGREDIENTS
- 1 and 3/4 cups (220g) all-purpose flour
- 1 and 3/4 cup (350g) granulated sugar
- 3/4 cup (65g) unsweetened cocoa powder
- 1 teaspoon baking powder
- 1 and 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup (240ml) buttermilk
- 1/2 cup (120ml) vegetable oil
- 2 large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 1 cup (240ml) freshly brewed strong hot coffee
Chocolate Frosting:
- 1 and 1/2 cups (3 sticks or 345g) unsalted butter, softened to room temperature
- 3-4 cups (360-480g) confectioners’ sugar
- 3/4 cup (65g) unsweetened cocoa powder
- 3-5 Tablespoons (45-75ml) heavy cream
- 1 teaspoon pure vanilla extract
- 1/2 – 3/4 teaspoon salt
- 15 oz (1.5 bags) chocolate chips
INSTRUCTIONS
Cake:
- Preheat the oven to 350F degrees. Butter and flour two 9-inch round cake pans, or use non-stick spray.
- In a medium-sized bowl, sift together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt. Set aside.
- In a large bowl, using a handheld or stand mixer on high speed, mix the buttermilk, vegetable oil, room temperature eggs, and vanilla until well combined.
- Slowly add the dry ingredients to the wet ingredients with the mixer on low. Add the hot coffee and mix until the batter is smooth. The batter will be thin, which is normal.
- Pour the batter evenly into the prepared baking pans and bake for 23-27 minutes, or until a toothpick inserted in the center comes out clean. Check after 23 minutes to avoid overbaking. Allow the cakes to cool completely before frosting.
Frosting:
- In a large bowl, using a handheld or stand mixer fitted with a paddle attachment, beat the softened butter on high speed until smooth and creamy, which should take about 2 minutes.
- Reduce the mixer speed to low and slowly add 3.5 cups of confectioners’ sugar and the cocoa powder. Mix until the sugar and cocoa are absorbed into the butter, about 2 minutes.
- Turn the mixer to medium speed and add the vanilla extract and heavy cream. Once added, increase the mixer speed to high and beat for 1 minute until the frosting is fluffy and smooth.
- Taste the frosting, and if needed, add salt to taste. Adjust the consistency by adding more confectioners’ sugar for a thicker frosting or more heavy cream for a smoother one.
Assembly:
- Place one cake layer, flat side up, on a plate or cake stand. Spread a layer of frosting on top of the cake using a knife or an offset spatula.
- Carefully place the second cake layer on top, rounded side up. Spread the frosting evenly on the top and sides of the cake.
- Decorate the cake with chocolate chips, either by pressing them into the frosting or arranging them on top to your liking.
