Coffee Cake is a delectable and versatile treat that is enjoyed with a cup of coffee or tea during breakfast, brunch, or as a delightful snack. Contrary to its name, Coffee Cake does not typically contain coffee as an ingredient; rather, it is a cake meant to be paired with coffee. The term “coffee cake” originated from its traditional association with being served alongside coffee during social gatherings.

The history of Coffee Cake can be traced back to Europe, where similar cakes were commonly served with coffee during coffee breaks or social gatherings. The concept of pairing cake with coffee became popular in the 17th century and quickly spread across various European countries.

In the United States, Coffee Cake gained popularity during the late 19th and early 20th centuries. It became a staple in American baking and was often served in households and at community gatherings. Coffee Cake recipes evolved over time, and various regional variations emerged, incorporating ingredients such as cinnamon, nuts, fruits, and streusel toppings.

Today, Coffee Cake has become a beloved classic in many cultures, with numerous variations and flavor combinations. It remains a popular choice for breakfast and brunch, offering a delightful balance of sweetness and warmth that complements a hot cup of coffee or tea.

 

 

INGREDIENTS

  • 1/2 cup coconut oil
  • 2 eggs
  • 1 cup brown sugar
  • 1 tsp. vanilla
  • 1 cup cooked oatmeal
  • 1/2 cup white whole wheat flour
  • 1/2 cup all-purpose flour
  • 1 tsp. ground cloves
  • 1 tsp. salt
  • 1 tsp. ground cinnamon
  • 1 tsp. baking soda
  • 1 Tbsp. coconut oil (for streusel topping)
  • 1 cup chopped pecans (for streusel topping)
  • 1 cup brown sugar (for streusel topping)

 

INSTRUCTIONS

  1. Preheat the oven to 350°F (175°C) and spray an 8×8″ baking pan with cooking spray.
  2. In a mixing bowl, stir together the coconut oil, eggs, brown sugar, vanilla, and cooked oatmeal until well combined.
  3. In a separate bowl, mix together the white whole wheat flour, all-purpose flour, ground cloves, salt, cinnamon, and baking soda.
  4. Combine the dry ingredients with the wet ingredients and stir until fully incorporated. Pour the batter into the prepared pan.
  5. In a small bowl, mix 1 tablespoon of coconut oil, chopped pecans, and brown sugar to create the streusel topping.
  6. Sprinkle the streusel mixture evenly over the top of the cake batter in the pan.
  7. Bake the coffee cake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Once baked, cut the coffee cake into squares and serve.
