Chocolate Layer:
- 6 Tbsp unsweetened cocoa powder, plus more for pans
- 3/4 cup all-purpose flour
- 3/4 cup sugar
- 1 tsp + pinch baking soda
- 1/2 tsp + pinch baking powder
- 1/2 tsp + pinch salt
- 1 large egg
- 2 Tbsp buttermilk
- 6 Tbsp water
- 2 Tbsp canola oil
- 1 tsp vanilla extract
Whipped Brown Sugar Icing:
- 7 Tbsp all-purpose flour
- 1 1/2 cups milk
- 1 Tbsp pure vanilla extract
- 1 1/2 cups salted butter, at room temperature
- 1 1/2 cups brown sugar, packed
- Pinch of salt
INSTRUCTIONS
- Preheat the oven to 350°F (175°C). Butter 2 – 8″ round cake pans, and dust one with flour and the other with cocoa powder.
Pumpkin Layer:
- Combine sugar, canola oil, and eggs in a mixing bowl; mix well.
- In another bowl, whisk together flour, baking soda, ground cinnamon, baking powder, and salt.
- Stir the dry ingredients into the oil mixture, beating well until fully combined. Stir in the pumpkin puree.
- Pour the pumpkin batter into the flour-prepared pan. Bake for 35-40 minutes. Let it cool completely before turning it out.
Chocolate Layer:
- In the bowl of a mixer, combine cocoa powder, flour, sugar, baking soda, baking powder, and salt. Beat on low until combined.
