INGREDIENTS

Cookie Dough:

  • 1/2 cup butter
  • 1/3 cup white sugar
  • 1/3 cup dark brown sugar
  • 1 1/2 tsp vanilla extract
  • 1 cup plus 2 tbsp flour
  • Pinch of salt
  • 1 cup chocolate chips

 

Cookie Crumb Crust:

  • 1 1/3 cups graham cracker crumbs
  • 3 tbsp sugar
  • 1/3 cup melted butter

 

Vanilla Cheesecake:

  • 2/3 cup sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 eight-ounce packages cream cheese
  • 1/2 cup whipping cream

 

Chocolate Ganache:

  • 1/3 cup whipping cream
  • 1 1/3 cups chocolate chips

 

Vanilla Whipped Cream:

  • 1 cup whipping cream
  • 3 rounded tbsp icing sugar (powdered sugar)
  • 1 tsp pure vanilla extract

 

INSTRUCTIONS

  1. Prepare the Cookie Dough:
    • Cream together the butter, white sugar, dark brown sugar, and vanilla extract until well combined.
    • Add flour and salt, then fold in the chocolate chips.
    • Chill the dough in the fridge for at least an hour.
  2. Create the Cookie Crumb Crust:
    • Combine graham cracker crumbs, sugar, and melted butter in a small bowl.
    • Press the mixture into the bottom of a greased or parchment-lined 9-inch springform pan.
  3. Prepare the Vanilla Cheesecake:
    • Cream together cream cheese, sugar, eggs (one at a time), and vanilla extract.
    • Blend in 1/2 cup of whipping cream.
    • Fold in 3/4 of the chilled cookie dough pieces.
    • Pour the cheesecake mixture over the prepared crust and bake at 300 degrees F for 60-70 minutes.
  4. Cool and Top the Cheesecake:
    • Allow the cheesecake to cool thoroughly on a wire rack at room temperature.
    • Top the cooled cheesecake with chocolate ganache and vanilla whipped cream, along with the reserved cookie dough pieces.
  5. Prepare the Chocolate Ganache:
    • Heat the whipping cream almost to boiling.
    • Pour the heated cream over the chocolate chips and let it stand for 5 minutes.
    • Stir until smooth and pour evenly over the cheesecake.
  6. Create the Vanilla Whipped Cream:
    • Beat whipping cream to firm peaks and use it to garnish the edges of the cheesecake.
