Eggplant and Yogurt

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

 

INGREDIENTS:

  • 1 pound chopped eggplant
  • 3 unpeeled shallots
  • 3 unpeeled garlic cloves
  • 1/4 cup olive oil
  • Salt and pepper, to taste
  • 1/2 cup plain yogurt
  • Fresh dill, chopped
  • Almond slices, for garnish (optional)

 

INSTRUCTIONS:

  1. Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. On a baking sheet, combine the chopped eggplant, unpeeled shallots, and unpeeled garlic cloves.
  3. Drizzle 1/4 cup of olive oil over the vegetables. Season with salt and pepper to taste.
  4. Toss the vegetables to ensure they are evenly coated with oil, salt, and pepper.
  5. Roast the vegetables in the preheated oven for about 30 minutes or until the eggplant is tender and slightly browned.
  6. Remove the baking sheet from the oven and let the roasted vegetables cool slightly.
  7. Once the vegetables have cooled, squeeze the shallots and garlic cloves from their skins. Finely chop them.
  8. In a mixing bowl, combine the roasted eggplant, chopped shallots, chopped garlic, and plain yogurt.
  9. Add freshly chopped dill to the mixture and season with additional salt and pepper if needed.
  10. Mix all the ingredients together until well combined.
  11. Garnish the eggplant and yogurt dip with almond slices (optional).
  12. Serve the dip with pita bread, tortilla chips, or vegetable sticks.
