- 7 cups confectioners sugar, sifted
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 2 teaspoons orange extract
- Orange food coloring
Decoration:
- Chocolate orange slices and/or orange peel
INSTRUCTIONS
- Preheat the oven to 350°F (175°C) and line muffin tins with cupcake liners.
- In a large bowl, whisk together the all-purpose flour, dark cocoa powder, granulated sugar, baking soda, baking powder, and salt until well combined.
- Add the eggs, vegetable oil, vanilla extract, and milk to the bowl with the dry ingredients. Mix until just combined.
- Pour in the hot water and mix on medium speed with a hand mixer for about 1-2 minutes. The batter will be very liquidy.
- Fill each cupcake liner about 2/3 full with the batter. Bake in the preheated oven for 15-17 minutes or until a toothpick inserted in the middle comes out clean.
- Remove the cupcakes from the oven and let them cool for about 5 minutes. Then transfer them to a cooling rack to cool completely.
- In a stand mixer fitted with the paddle attachment, cut the unsalted butter into cubes and mix it on medium speed for 30 seconds.
- Add 4 cups of sifted confectioners sugar, milk, vanilla extract, and orange extract. Mix on low speed for 10 seconds to avoid the sugar flying everywhere, then turn the mixer up to medium speed for 5 minutes.
- Scrape the sides and bottom of the bowl to ensure all the butter gets mixed in, then add the remaining confectioners sugar and mix again on low speed for 10 seconds. Add 2 drops of orange food coloring and increase the speed to high for 2-3 minutes.
- Prepare a piping bag with a large round tip and fill it with the frosting. Pipe large dollops of frosting onto each cupcake.
- Top each cupcake with a chocolate orange slice and/or some orange peel for a beautiful and delicious finishing touch.
