Serves :1

 

INGREDIENTS:

• 1 cup chopped Cauliflower

• 2 hardboiled eggs – chopped

• 2 oz. shredded cheddar cheese, low-fat

• 1 red onion

• Celery

• 1 dill pickles

• 1 tbsp. yellow mustard

 

INSTRUCTIONS:

  1. In a large mixing bowl, combine the chopped cauliflower, chopped hardboiled eggs, and shredded cheddar cheese.
  2. Finely chop the red onion, celery, and dill pickle, and add them to the bowl.
  3. Add the yellow mustard to the mixture.
  4. Mix all the ingredients thoroughly until well combined.
  5. Adjust the seasoning if necessary by adding more mustard or salt and pepper to taste.
  6. Serve the cauliflower egg salad as a side dish or in sandwiches or wraps.
