INGREDIENTS

  • 2 cups chocolate cookie crumbs
  • 6 tablespoons unsalted butter, melted
  • 2 cups pumpkin puree
  • 3/4 cup brown sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons pumpkin pie spice
  • 2 eggs
  • 1 (12-ounce) can evaporated milk
  • 1 tablespoon bourbon
  • Chocolate syrup (for drizzling)
  • Whipped cream (for topping)

 

INSTRUCTIONS

  1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
  2. Combine the chocolate cookie crumbs and melted butter in a bowl until the crumbs are moistened.
  3. Press the cookie crumbs into the bottom and up the sides of a 9-inch pie dish. Bake the crust for 10 minutes in the preheated oven. Remove from the oven and let it cool completely.
  4. In another bowl, combine the pumpkin puree, brown sugar, unsweetened cocoa powder, pumpkin pie spice, eggs, evaporated milk, and bourbon. Whisk until all the ingredients are well combined.
  5. Pour the pumpkin-chocolate mixture into the cooled crust.
  6. Bake the pie in the 350-degree oven for 55 to 65 minutes or until the center is set, and a toothpick inserted in the center comes out clean.
  7. Remove the pie from the oven and allow it to cool at room temperature for 2 hours. Alternatively, refrigerate the pie until chilled before slicing.
  8. Once ready to serve, drizzle the pie with chocolate syrup and top with whipped cream.
