INGREDIENTS:

  • 6 cups Lamb (or chicken) broth
  • 16 oz Manestra or rice
  • 16 oz Tomato bits
  • 1/2 cup Romano cheese, grated

 

INSTRUCTIONS:

  1. In a large pot, combine the lamb (or chicken) broth, manestra (or rice), and tomato bits.
  2. Cook the mixture over medium heat for approximately 20 minutes or until the manestra (or rice) is fully cooked and tender. Stir occasionally to ensure even cooking.
  3. Once the manestra (or rice) is cooked, the flavors of the broth and tomato bits will infuse the dish, creating a delicious and hearty soup-like consistency.
  4. Sprinkle the grated Romano cheese over the soup before serving. The cheese will add a rich and savory flavor to the dish.
  5. Ladle the flavorful Lamb or Chicken Broth with Manestra (or rice) into serving bowls and enjoy this warm and comforting Mediterranean-inspired soup.
