INGREDIENTS:

  • 3 tsp Olive Oil
  • 1 small Onion; chopped
  • 1 Carrot; julienned
  • 1 Zucchini; julienned
  • 1 tsp Garlic; finely chopped
  • 1 tsp Fresh Ginger; finely chopped
  • 1 dash Red Pepper Flakes
  • 8 oz Penne Pasta; cooked

 

INSTRUCTIONS:

  1. Heat the oil in a wok over medium-high heat.
  2. Add chopped onions and julienned carrots to the wok.
  3. Stir-fry the onions and carrots for about 2 minutes until they become slightly tender.
  4. Add the julienned zucchini, finely chopped garlic, chopped ginger, and a dash of red pepper flakes to the wok.
  5. Continue stirring and tossing the vegetables to combine everything evenly.
  6. Throw in the cooked penne pasta into the wok.
  7. Stir-fry for about 1 minute or until everything is thoroughly heated and fragrant.
  8. Transfer the stir-fried pasta and vegetables to a large serving bowl.
  9. Enjoy your delicious stir-fried pasta and vegetables!
