The origins of German Potato Salad can be traced back to the 18th century, where it emerged as a staple in German households. Potatoes were introduced to Europe during this time, and they quickly became a vital part of German cuisine due to their affordability and versatility.

The traditional German Potato Salad features boiled potatoes, bacon or sausage, and a tangy dressing. The dressing typically includes vinegar, mustard, and often incorporates ingredients such as onions, herbs, and sometimes a touch of sweetness from sugar or honey.

INGREDIENTS

  • 2 pounds waxy potatoes (such as Yukon Gold or red potatoes), peeled and cubed
  • 4 slices bacon, chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 2 sausages (bratwurst, kielbasa, or your preferred variety), sliced
  • 3 tablespoons white vinegar
  • 1 tablespoon Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon sugar (optional, for a touch of sweetness)
  • Salt and black pepper, to taste
  • Chopped fresh parsley, for garnish

 

INSTRUCTIONS

  1. Place the cubed potatoes in a large pot and cover them with cold water. Bring the water to a boil, then reduce the heat and simmer for about 10-15 minutes, or until the potatoes are tender but still hold their shape.
  2. While the potatoes are cooking, heat a skillet over medium heat. Add the chopped bacon and cook until crispy. Remove the bacon from the skillet and set it aside, leaving the bacon fat in the skillet.
  3. In the same skillet, add the chopped onion and minced garlic. Sauté until the onion becomes translucent and fragrant.
  4. Remove the onion and garlic from the skillet and set them aside.
  5. In the same skillet, add the vegetable oil and heat it over medium heat. Add the sausage slices and cook until they are browned and cooked through. Remove the sausage from the skillet and set it aside.
  6. In a small bowl, whisk together the white vinegar, Dijon mustard, olive oil, sugar (if using), salt, and black pepper to create the dressing.
  7. Drain the cooked potatoes and transfer them to a large mixing bowl.
  8. Pour the dressing over the warm potatoes, stirring gently to coat them evenly.
  9. Add the sautéed onion, garlic, cooked bacon, and sausage slices to the potatoes. Gently toss to combine all the ingredients.
  10. Taste and adjust the seasoning as desired.
  11. Allow the salad to sit at room temperature for about 30 minutes to allow the flavors to meld together.
  12. Just before serving, garnish the German Potato Salad with chopped fresh parsley.
  13. Serve the salad warm or at room temperature as a main course or side dish.
