INGREDIENTS

FOR THE BEEF GYROS:

  • 2 pounds beef (such as sirloin or flank steak), thinly sliced
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 4 garlic cloves, minced
  • 2 teaspoons dried oregano
  • 2 teaspoons paprika
  • 1 teaspoon ground cumin
  • Salt and black pepper, to taste

 

FOR THE TZATZIKI SAUCE:

  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and squeezed to remove excess moisture
  • 2 garlic cloves, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt and black pepper, to taste

 

FOR SERVING:

  • Pita bread or flatbread
  • Sliced tomatoes
  • Sliced onions
  • Shredded lettuce
  • Fresh herbs (such as parsley or mint), chopped

 

INSTRUCTIONS

FOR THE BEEF GYROS:

  1. In a bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, paprika, cumin, salt, and black pepper. Mix well to create the marinade.
  2. Place the thinly sliced beef in a large zip-top bag or shallow dish. Pour the marinade over the beef, ensuring all slices are coated. Seal the bag or cover the dish and refrigerate for at least 2 hours or overnight.
  3. Preheat your grill or a large skillet over medium-high heat.
  4. Remove the marinated beef from the refrigerator and let it come to room temperature.
  5. Grill the beef slices for about 2-3 minutes per side, or until they reach your desired level of doneness. If using a skillet, cook the beef in batches, ensuring it is evenly browned and cooked through.
  6. Once cooked, transfer the beef to a cutting board and let it rest for a few minutes.
  7. Thinly slice the beef against the grain, creating tender gyro meat slices.

 

FOR THE TZATZIKI SAUCE:

  1. In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, fresh dill, lemon juice, salt, and black pepper. Mix well until all ingredients are thoroughly incorporated.
  2. Taste the tzatziki sauce and adjust the seasonings according to your preference.

 

TO ASSEMBLE THE BEEF GYROS:

  1. Warm the pita bread or flatbread according to package instructions.
  2. Spread a generous amount of tzatziki sauce on the warmed pita bread.
  3. Layer the sliced beef gyro meat on top of the tzatziki sauce.
  4. Add sliced tomatoes, onions, and shredded lettuce.
  5. Sprinkle with chopped fresh herbs.
  6. Fold or roll the pita bread to enclose the filling, creating a gyro sandwich.
