The tradition of roasting turkeys dates back centuries and has become synonymous with festive feasts and special occasions, particularly Thanksgiving. The practice of roasting a whole turkey is deeply rooted in American culinary heritage.

Turkey, native to North America, was first domesticated by Indigenous peoples and became a valuable food source. Early European settlers embraced the turkey as a centerpiece for celebratory meals, leading to the establishment of the enduring tradition of serving roasted turkey on special occasions.

Herb-Roasted Turkey incorporates the use of fragrant herbs, such as thyme, rosemary, and sage, to infuse the meat with exceptional flavors. These herbs not only complement the natural richness of the turkey but also create an aromatic and enticing ambiance while roasting.

PREP: 10 MIN.

BAKE: 4 HOURS

MAKES: 12-14 SERVINGS

INGREDIENTS

  • 1 whole turkey (12-15 pounds)
  • Salt and black pepper, to taste
  • 1 cup unsalted butter, softened (alternatively, use olive oil)
  • 1/4 cup fresh thyme leaves, chopped
  • 1/4 cup fresh rosemary leaves, chopped
  • 1/4 cup fresh sage leaves, chopped
  • 1 lemon, halved
  • 1 onion, quartered
  • 4 garlic cloves, smashed
  • 2 cups chicken or turkey broth

INSTRUCTIONS

  1. Preheat your oven to 325°F (163°C).
  2. Remove the turkey from its packaging and pat it dry with paper towels. Place the turkey on a rack set inside a roasting pan.
  3. Season the cavity of the turkey generously with salt and black pepper.
  4. In a mixing bowl, combine the softened butter (or olive oil) with the chopped thyme, rosemary, and sage. Season with salt and black pepper. Mix well to incorporate the herbs into the butter/oil.
  5. Carefully separate the skin from the turkey breast by gently sliding your fingers between the skin and the meat. Be careful not to tear the skin.
  6. Spread about half of the herb butter/oil mixture evenly under the turkey skin, reaching as far as you can. Massage the skin to distribute the mixture evenly.
  7. Rub the remaining herb butter/oil mixture all over the outside of the turkey, coating it thoroughly.
  8. Stuff the turkey cavity with the lemon halves, onion quarters, and smashed garlic cloves.
  9. Pour the chicken or turkey broth into the bottom of the roasting pan. This will help to keep the turkey moist during roasting.
  10. Cover the turkey loosely with aluminum foil, ensuring it is tented but not touching the skin.
  11. Place the roasting pan with the turkey in the preheated oven. Roast for about 13-15 minutes per pound, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
  12. Every 30 minutes, remove the foil and baste the turkey with the pan juices or additional melted butter. This helps to promote browning and keeps the turkey moist.
  13. Once the turkey reaches the desired temperature, remove it from the oven and tent it with foil. Allow the turkey to rest for about 20-30 minutes before carving.
  14. Carve the Herb-Roasted Turkey and serve it with your favorite Thanksgiving side dishes and gravy.
