Sizzling Tex Mex Fajitas are a popular and flavorful dish that originated in the border region between Texas and Mexico. This dish features marinated and grilled beef, combined with sautéed onions and peppers, all wrapped in warm tortillas. Tex Mex Fajitas have become an iconic part of Tex-Mex cuisine, loved for their sizzling presentation and delicious combination of flavors.

INGREDIENTS

  • ⅓ cup beef broth
  • ¼ cup lime juice
  • 3 tablespoons olive oil, divided
  • 4 garlic cloves, minced
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon salt
  • 1 envelope savory herb with garlic soup mix, divided
  • 1 teaspoon Dijon mustard
  • ½ teaspoon pepper
  • ½ teaspoon cayenne pepper
  • ½ teaspoon Liquid Smoke (optional)
  • 2 pounds beef skirt steak, cut into 4-to 6-inch portions
  • 2 large onions, sliced
  • 1 medium green pepper, sliced
  • 1 medium sweet yellow pepper, sliced
  • 12 flour tortillas (8 inches)
  • Salsa, shredded cheese, guacamole, and sour cream (optional)

 

INSTRUCTIONS

  1. In a large resealable plastic bag, combine the beef broth, lime juice, 1 tablespoon of olive oil, minced garlic, Worcestershire sauce, salt, 1 teaspoon of the savory herb with garlic soup mix, Dijon mustard, pepper, cayenne pepper, and Liquid Smoke (if desired). Add the beef skirt steak to the bag, seal it, and turn the bag to coat the steak in the marinade. Refrigerate for 8 hours or overnight to allow the flavors to meld.
  2. In a large bowl, combine the sliced onions, green pepper, yellow pepper, and the remaining olive oil and savory herb with garlic soup mix. Divide the mixture in half and place each half on a double layer of heavy-duty foil, creating two foil packets (about 12 inches square). Fold the foil around the vegetables and seal them tightly.
  3. Drain the beef skirt steak from the marinade and discard the marinade. Preheat the grill to medium heat. Grill the steak and the foil packets of vegetables, covered, for 10-13 minutes. Turn the steak once during grilling. Cook the steak to your desired doneness (medium-rare: 145°F, medium: 160°F, well-done: 170°F) and cook the vegetables until they are tender.
  4. Carefully open the foil packets to allow the steam to escape. Thinly slice the grilled steak. Place the beef and grilled vegetables on the flour tortillas. Serve the Tex Mex Fajitas with salsa, shredded cheese, guacamole, and sour cream if desired.
