INGREDIENTS

  • ½ cup barbecue sauce
  • 1 tablespoon honey
  • 2 chipotle peppers in adobo sauce, chopped
  • 1 pork tenderloin (1 pound)
  • 1½ cups coleslaw mix
  • 2 tablespoons reduced-fat sour cream
  • 2 tablespoons Miracle Whip Light
  • 1 tablespoon Dijon mustard
  • 4 hamburger buns, split

 

INSTRUCTIONS

  1. In a small bowl, combine the barbecue sauce, honey, and chopped chipotle peppers. Set aside ¼ cup of the sauce for serving.
  2. Moisten a paper towel with cooking oil and lightly coat the grill rack using long-handled tongs. Prepare the grill for indirect heat by using a drip pan.
  3. Place the pork tenderloin over the drip pan and grill, covered, over indirect medium-hot heat for 20-25 minutes or until a thermometer inserted into the thickest part of the pork reads 145°F (63°C), basting occasionally with the remaining barbecue sauce. Let the pork rest for 5 minutes before slicing.
  4. Meanwhile, in a separate bowl, combine the coleslaw mix, sour cream, Miracle Whip Light, and Dijon mustard.
  5. Brush the cut sides of the hamburger buns with the reserved barbecue sauce. Slice the pork tenderloin into ¼-inch thick slices and place them on the bottom halves of the buns. Top with the coleslaw mixture and cover with the bun tops.
  6. Serve the Chipotle BBQ Pork Sandwiches with the remaining reserved barbecue sauce for dipping or drizzling.
