  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon red pepper flakes (adjust to taste)
  • 1/4 cup chopped peanuts, for garnish
  • Fresh cilantro leaves, for garnish
  • Steamed rice or noodles, for serving

 

INSTRUCTIONS

  1. In a medium bowl, whisk together the creamy peanut butter, soy sauce, honey, rice vinegar, minced garlic, grated ginger, and red pepper flakes until well combined. This will serve as the marinade and sauce for the Peanutty Chicken.
  2. Place the chicken pieces in a shallow dish or resealable plastic bag. Pour the peanut sauce over the chicken, ensuring that all pieces are well coated. Marinate the chicken in the refrigerator for at least 30 minutes, or up to 4 hours for optimal flavor.
  3. Preheat your grill or a large skillet over medium-high heat. If using a skillet, add a small amount of oil to prevent sticking.
  4. Once the grill or skillet is hot, add the marinated chicken pieces, discarding any excess marinade. Cook the chicken for about 6-8 minutes per side, or until it reaches an internal temperature of 165°F (74°C) and is cooked through.
  5. Remove the cooked chicken from the grill or skillet and let it rest for a few minutes.
  6. Serve the Peanutty Chicken over a bed of steamed rice or noodles, garnishing with chopped peanuts and fresh cilantro leaves for added texture and freshness.
  7. Drizzle any remaining peanut sauce over the chicken or reserve it as a dipping sauce on the side.
