- ½ cup unsweetened pineapple juice
- ¼ cup reduced-sodium soy sauce
- 2 tablespoons prepared horseradish
- 2 tablespoons minced fresh parsley
- 5 teaspoons sesame oil, divided
- 2 teaspoons honey
- ½ teaspoon coarsely ground pepper
- 8 salmon fillets (6 ounces each)
- 5 green onions, coarsely chopped
INSTRUCTIONS
- In a small bowl, combine the pineapple juice, soy sauce, horseradish, minced parsley, 3 teaspoons of sesame oil, honey, and coarsely ground pepper. Pour ⅔ cup of the marinade into a large resealable plastic bag. Add the salmon fillets and chopped green onions to the bag. Seal the bag and turn it to coat the salmon evenly. Refrigerate the bag for 1 to 1½ hours, turning the bag occasionally. Reserve the remaining sesame oil and marinade for basting.
- Drain and discard the marinade from the bag. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack to prevent sticking.
- Grill the salmon fillets, skin side down, covered, over medium heat or broil them 4 inches from the heat for 8-12 minutes, or until the fish flakes easily with a fork. Baste the salmon frequently with the reserved marinade during the cooking process to enhance the flavor and moisture.
