Garlic and anchovies elevate plain green beans to nothing short of fantastic. The beans can be boiled ahead of time, but do not refrigerate them or they will lose their fresh flavor. If you prefer to leave out the anchovies, add a tablespoon or two of chopped capers or olives to amp up the flavor.

INGREDIENTS

  • Salt
  • 1 pound thin green beans, trimmed
  • 2 tablespoons unsalted butter
  • 2 tablespoons extra-virgin olive oil
  • 1 garlic clove, finely chopped
  • 6 anchovy fillets, drained and chopped
  • Freshly ground pepper
  • 2 tablespoons chopped fresh parsley

 

INSTRUCTIONS

  1. Bring a large saucepan of salted water to a boil.
  2. Add the green beans and cook until crisp-tender, about 7 minutes.
  3. Drain the green beans in a colander and cool them under cold running water. Drain well.
  4. Wipe the saucepan dry and place it back on the stove.
  5. Add the butter and olive oil to the saucepan and melt the butter over medium heat.
  6. Add the garlic and anchovies to the saucepan and cook for about 2 minutes, mashing the anchovies with the back of a spoon until they dissolve.
  7. Add the cooked green beans to the saucepan and season with salt and pepper to taste. Toss well to coat the beans with the anchovy mixture.
  8. Add the chopped parsley and toss again.
  9. Serve the sautéed green beans with anchovies hot as a side dish or use them in your preferred serving suggestions.
