INGREDIENTS:

  • 1 cup flax seeds meal for breading
  • 1/2 tsp. pepper
  • 1/2 tsp. minced garlic
  • 1/2 tsp. paprika
  • 1/4 tsp. salt
  • 2 large egg whites (or whole eggs), beaten
  • 1 pound skinless, boneless chicken pieces

 

INSTRUCTIONS:

  1. Preheat the oven to 400°F. Set a wire rack on a baking sheet and coat it with some coconut oil to prevent sticking.
  2. In a food processor or blender, combine flax seeds meal, pepper, minced garlic, paprika, and salt. Process the mixture until the flax seeds are finely ground. Transfer the mixture to a shallow dish.
  3. Place the beaten egg whites (or whole eggs) in a separate dish.
  4. Dip each piece of chicken into the beaten egg, making sure all sides are coated.
  5. Roll the egg-coated chicken pieces in the flax breading mixture, ensuring an even coating on all sides.
  6. Place the coated chicken pieces on the prepared wire rack.
  7. Sprinkle a few drops of olive oil over each chicken piece to help the breading brown and crisp up.
  8. Bake the chicken in the preheated oven until it is cooked through and the breading is golden brown and crisp, about 8 minutes per side.
  9. Once cooked, remove the chicken from the oven and let it cool slightly before serving.
  10. Serve the flax-crusted chicken with a large fiber-loaded salad for a nutritious and delicious meal.
