- 2 cups chopped red peppers or spinach
- 1 cup zucchini
- 2 tbsp. coconut oil
- 1 cup sliced mushrooms
- 1/2 cup sliced green onions
- 8 eggs
- 1 cup coconut milk
- 1/2 cup almond flour
- 2 tbsp. minced fresh parsley
- 1/2 tsp. dried basil
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
INSTRUCTIONS:
- Preheat the oven to 350 degrees F.
- In a skillet, heat 2 tbsp. of coconut oil over medium heat.
- Add mushrooms, onions, zucchini, and red pepper (or spinach) to the skillet. Cook until the vegetables are tender, approximately 5 minutes.
- Drain the cooked vegetables and spread them evenly over a baking dish.
- In a bowl, beat the eggs with coconut milk, almond flour, minced parsley, dried basil, salt, and ground black pepper.
- Pour the egg mixture over the cooked vegetables in the baking dish.
- Bake in the preheated oven until the center is set, approximately 35 to 40 minutes.
