Serves :6

 

INGREDIENTS:

  • 2 cups chopped red peppers or spinach
  • 1 cup zucchini
  • 2 tbsp. coconut oil
  • 1 cup sliced mushrooms
  • 1/2 cup sliced green onions
  • 8 eggs
  • 1 cup coconut milk
  • 1/2 cup almond flour
  • 2 tbsp. minced fresh parsley
  • 1/2 tsp. dried basil
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper

 

INSTRUCTIONS:

  1. Preheat the oven to 350 degrees F.
  2. In a skillet, heat 2 tbsp. of coconut oil over medium heat.
  3. Add mushrooms, onions, zucchini, and red pepper (or spinach) to the skillet. Cook until the vegetables are tender, approximately 5 minutes.
  4. Drain the cooked vegetables and spread them evenly over a baking dish.
  5. In a bowl, beat the eggs with coconut milk, almond flour, minced parsley, dried basil, salt, and ground black pepper.
  6. Pour the egg mixture over the cooked vegetables in the baking dish.
  7. Bake in the preheated oven until the center is set, approximately 35 to 40 minutes.
