INGREDIENTS
- 1¾ cups graham cracker crumbs, divided
- 3 tablespoons butter, melted
- 1 cup sugar
- 2 tablespoons cornstarch
- 4 cups diced fresh or frozen rhubarb
- 1 package (3 ounces) raspberry or strawberry gelatin
- 1 carton (8 ounces) frozen whipped topping, thawed
- 1½ cups miniature marshmallows
- 2 cups cold milk
- 1 package (3.4 ounces) instant vanilla pudding mix
INSTRUCTIONS
- In a small bowl, combine 1½ cups of graham cracker crumbs and melted butter. Press the mixture into a greased 13×9-inch baking dish. Bake the crust in a preheated oven at 350°F (175°C) for about 10 minutes or until the crust is lightly browned. Allow the crust to cool on a wire rack.
- In a large saucepan, combine the sugar, cornstarch, and diced rhubarb. Bring the mixture to a boil, stirring constantly. Cook and stir for 2 to 3 minutes or until the mixture thickens and the rhubarb becomes tender. Remove the saucepan from the heat and stir in the raspberry or strawberry gelatin until it is completely dissolved. Cover the saucepan and refrigerate the rhubarb mixture for about 1 hour or until it has partially set.
- Once the rhubarb mixture has partially set, spoon it over the cooled graham cracker crust, spreading it evenly. In a separate bowl, combine the thawed whipped topping and miniature marshmallows. Spread this whipped topping and marshmallow mixture over the rhubarb layer.
- In a large bowl, whisk together the cold milk and instant vanilla pudding mix for about 2 minutes or until the mixture becomes smooth and thickens slightly. Let the pudding mixture stand for an additional 2 minutes or until it reaches a soft-set consistency. Carefully spread the pudding mixture over the marshmallow topping, ensuring even coverage. Sprinkle the remaining graham cracker crumbs over the top. Refrigerate the dessert for at least 2 hours before serving to allow it to set and chill.

- Rhubarb Icebox Dessert is best served chilled. The layers of tangy rhubarb, creamy pudding, and crunchy graham cracker crust come together to create a refreshing and delicious treat. Enjoy this delightful dessert during warm weather or any time you’re in the mood for a cool and satisfying treat.
