Mac & cheese is America’s favorite and loved by everyone. It’s a perfect holiday side dish. This baked mac and cheese comes with a creamy and cheesy sauce and makes an ultimate comfort food. This cheesy miracle is made of layers of cheese melted into creamy cheese sauce. It might seem a bit daunting if this is your first time making mac and cheese but do not worry this step by step detailed recipe got your back. The overview of this recipe is as follow: Boil elbow macaroni and drain it. Now make a rich cheesy sauce with fat, butter and milk cooked until thickened, then comes shredded cheese that you need to stir well in the sauce. Combine pasta with sauce. Put half of it in baking dish, sprinkle with shredded cheese, add next layer of mac and cheese and sprinkle more cheese over the top. Bake and enjoy this cheesy deliciousness. Ingredients:

  • 1 box elbow macaroni
  • 3 cups shredded cheddar cheese
  • 1 ½ cups shredded mozzarella
  • ¼ cup (57g) unsalted butter
  • ½ cup all-purpose flour
  • 2 cups whole milk
  • 2 ½ cups half and half
  • Salt and pepper

Instructions:

  • Preheat oven to 325F.
  • Cook elbow macaroni in lightly salted boiling water. Cook until firm to bite meaning cook less than you normally would so the pasta do not get mushy in the oven. Drain the pasta and drizzle some olive oil to keep from sticking.
  • Shred both cheeses and toss together to mix.
  • Keep the milk, butter and half and half at room temperature.
  • Melt butter over medium heat in a pan and add flour, salt and pepper and whisk to combine. Slowly pour half and half while whisking constantly. Continue to cook over medium heat until smooth and bubbling. Remove from heat and add half of the shredded cheese and stir until completely smooth and melted.
  • Take a large bowl and combine cooked pasta with the cheese sauce. Stir to combine. Now transfer half of the mac and cheese to a baking dish a sprinkle shredded cheese over it. Then pour rest of the mac and cheese and make a second layer. Again sprinkle the shredded cheese over it.
  • Place the dish in preheated oven and bake for 15 minutes until you see cheese bubbling and turning golden.
  • Take out of the oven. Serve and enjoy

 

Note: You can make mac and cheese ahead of time. Follow all the steps mentioned above except baking. When it is completely cooled off cover the baking dish tightly with foil and refrigerate for up to 2 days. When you are ready to bake keep the dish at room temperature for about 30 minutes and then bake for 25-30 minutes at 325F. Leftovers can be refrigerated covered tightly in foil for 3 to 4 days.
